Where have you been?

I know that is the question running through all of your minds.

Well I’ve been busy as usual, which has kept me away from the computer, which isn’t always a bad thing.

Plus, I got a new laptop and had no internet for a couple of days, gasp! I felt lost.

I’ve also been working on some blog changes, which I am super excited about and will share as soon as it is done.

This weekend we are headed off to Parker Arizona for some fun in the sun and relaxation. During our time there I plan on getting the most out of this new laptop and posting a bunch. I have high hopes for myself, but we shall see.

I’m Spicing Things Up: Pizza & Pasta

I haven’t posted about my cooking experiments in a while but I have been trying some new stuff out, and it’s been good.

I was at the store the other day and I was going to buy a ready-made pizza crust for a little over $4. I was disgusted. I thought to myself, I can make pizza dough for a heck of a lot less than this. So I went searching through my cookbooks for a dough recipe and lo and behold, the pioneer woman had a simple recipe, of course. And it’s delicious!

The first pizza I made was with pesto sauce, Roma tomatoes and mozzarella cheese. Oh so yummy!

I don’t have a picture of the second pizza I made but it was an oh so good BBQ chicken pizza with red onions, mozzarella cheese and cilantro.

My next adventure in cooking was a penne pasta with shrimp in a creamy tomato sauce.

Have I ever mentioned how much I love the smell of onion and garlic together cooking in butter. Yum!

It was so good, but a little too rich and creamy for me. Some days I can handle all the dairy and other days I can’t, but I really don’t care. I think I’ll be making it again.

Things I’m Diggin’.

Starbucks insulated cup.

I like drinking out of a straw, I like when a cup doesn’t sweat too much, and I like when the cup fits in a cup holder. This is perfect.

This book for boys. It talks about gross stuff, experiments, and all things boy.

And these books for Ethan. We’re preparing for the baby and potty training. I think I’ll need all the help I can get and these might just help.

I bought this with some my wedding money and I can’t wait to start using it. My photos are now going to be better than ever, or at least I hope so. I feel kinda geeky about being so jazzed about software.

And lastly…a made bed.

Don’t get me wrong, I’ve always liked to have my bed made, but lately I’ve been more obsessed with it. And as you can tell, it’s not even made that perfectly, but it’s better than nothing.

These are just a few of the things I’ve been lovin’.

Summer in a Bowl.

I made this pasta Sunday and I will be eating it all week.

When I was a kid my mom would make it during the summer. She would take it on vacation with us or when we went to the River. It reminds me of summer and I now tend to only make it during the summer season.

I can’t wait for the warm weather to be here everyday.

Disneyland!

Well we did it, we spent the day at Disneyland!

We had a great time, riding a few rides, eating, people watching, and just hanging out.

Ethan got a really nifty button for his first visit and he really didn’t care much about what was going on around him.

We headed to the little kid rides first and it didn’t go so well. We went on Mr. Toad’s first which was probably a mistake. He liked it and was scared all at the same time. So we thought Dumbo would be a good second choice and he did a little bit better but still was a little unsure.

We took a little break and then headed to It’s a Small World.

I thought for sure he would love it. Not so much, he cried a couple of times, but there were a couple of moments where he kind of smiled.

To make him feel better we got him a buzz balloon and he was instantly happy.

Next, we headed over to frontier land and I didn’t even know they had a little petting zoo which was the perfect break Ethan needed.

After running around with the animals for a while he quickly fell asleep, so Brett and I headed over to New Orleans to relax.

After Ethan’s nap we went on the Jungle Cruise and Pirates of the Caribbean. He loved the Cruise and kind of liked the Pirates.

Our last ride of the day was the carousel and again, he was a bit scared.

We really did have a wonderful day. I thought for sure I would not be able to make it all day but I was fine. I must admit, I was a little bummed that Ethan was afraid of the rides but I think he had a good time anyway. I mean, how could he not? It’s the happiest place on earth.

What have you been up to?

Well, I’ve been watching TV and not blogging and not taking too many pictures. I’ve been watching a lot of TLC, especially Say Yes to the Dress. I’m watching it as I type. I’ve been tired so when Ethan takes a nap, I’ve just been lounging around, not thinking.

But I have managed to take a few pictures here and there and this is what we’ve been doing while I haven’t been watching TLC.

What Mom? What’s wrong with climbing on the table and playing with the fruit?

On Saturday we hung out at Abby’s and played in the water.

He played hard.

Mother’s Day was a great day!

Brett made me breakfast, gave me flowers, and I didn’t do a thing. I watched TV, read the paper, played with Ethan, and hung out in the a backyard. Brett did the grocery shopping, cooked dinner, gave Ethan a bath, and cleaned the kitchen. I really didn’t do much of anything, which made it a wonderful day. I’m now awaiting my gift in the mail. Brett had to order it and it should be here today or tomorrow. I’ll be sure to share when I get it.

Today Ethan and I went to Shoreline Village. I’m going to be taking some family photos down there this weekend and I wanted to get an idea of what I was doing. It was nice to just walk around and spend some alone time with my little man.
