I’m Spicing Things Up: Pizza & Pasta

I haven’t posted about my cooking experiments in a while but I have been trying some new stuff out, and it’s been good.

I was at the store the other day and I was going to buy a ready-made pizza crust for a little over $4. I was disgusted. I thought to myself, I can make pizza dough for a heck of a lot less than this. So I went searching through my cookbooks for a dough recipe and lo and behold, the pioneer woman had a simple recipe, of course. And it’s delicious!

The first pizza I made was with pesto sauce, Roma tomatoes and mozzarella cheese. Oh so yummy!

I don’t have a picture of the second pizza I made but it was an oh so good BBQ chicken pizza with red onions, mozzarella cheese and cilantro.

My next adventure in cooking was a penne pasta with shrimp in a creamy tomato sauce.

Have I ever mentioned how much I love the smell of onion and garlic together cooking in butter. Yum!

It was so good, but a little too rich and creamy for me. Some days I can handle all the dairy and other days I can’t, but I really don’t care. I think I’ll be making it again.


I’m Spicing Things Up: Meatloaf

The things I love about meatloaf are, the mess is relatively small, you throw everything in one bowl, and you can stick it in the fridge and bake it later in the day. I had been wanting to make this meatloaf for quite some time, ever since I got the Pioneer Woman’s fabulous cookbook, but every time I would go to make it I would get grossed out. I have this thing with food touching and textures of food, and pregnancy doesn’t help. So it’s taken me a couple of months but I was ready to make it last night. It’s a traditional recipe to start out with, pretty much your basic stuff.

But here’s the kicker, you wrap it in bacon. Yep, talk about a heart attack, but yum!

Top it off with a ketchup glaze and voila…meatloaf that could kill you.

For sides we had asparagus and instant mashed potatoes (don’t judge, I wasn’t about to make them from scratch, I don’t have that much time). It was great!

I’m Spicing Things Up: Lasagna

I’m cooking again!

Well, only a little bit. Lately when I try to cook something or just think about cooking, it makes me feel sick.

But on Friday it was Brett’s birthday and he had asked for Lasagna so I was determinded to make it.

I was really excited because I finally got to use my Pioneer Woman Cookbook! Her recipe looked pretty simple and super yummy so I thought I would try. I had made a veggie lasagna a while ago and it was pretty good but never a meat lasagna, and I was hoping this was going to be great.

Oh let me tell you how wonderful it was.

First I had to cook the beef and sausage with garlic, oh my the smell was divine.

Then I made the cheese mixture. This recipe calls for cottage cheese instead of the usual ricotta which I think made it so much better. And of course lots of mozzarella.

And since it was Brett’s birthday I just had to make cupcakes.

p.s. it’s not the best idea to let your husband and 1 year old eat cupcakes on the couch.

For Christmas my parents gave me a gift certificate to amazon.com and I knew exactly what I wanted.

Some of them I have read and some I have not, but I will be reading all of them, eventually.

And then I had to get myself this.

Just looking through it makes me salivate. I can’t wait to start trying some of her recipes.
